Let the first run of rhubarb begin! I love rhubarb so thought I’d share a tidbit of knowledge I found on the web and included a family recipe for Rhubarb Custard Pie. Yum!

Ease Menopause:
Rhubarb helps to women who are going through menopause. Eating large amounts of rhubarb should help such women. Rhubarb contains large amounts of calcium, which will help to prevent the side effects usually associated with osteoporosis. In addition to this, rhubarb eating during menopause will also help ease the intensity of your hot flashes.

For over 2,000 years, rhubarb is used as laxative to treat constipation. Rhubarb root contains sennosides that must transform into rheinanthrones by good bacteria in the colon to give a laxative effect. Antibiotics destroy good bacteria of colon. When good bacteria are not available, rhubarb is not effective. Eating yogurt or taking an acidophilus supplement can reinstate good bacteria if taken after a course of antibiotics. Rhubarb root can help in the treatment of diarrhea but in smaller doses. Rhubarb roots are also used to improve digestion, increase appetite, and has been used to treat intestinal parasites, including pinworms, ringworms, and threadworms. If you are looking for an all natural cure for your acidic stomach and acid reflux, rhubarb is an excellent idea. Rhubarb contains dietary fiber which helps to counterbalance the acidity, making your indigestion a thing of the past.
Treat Cholesterol:
Rhubarb is extremely good to absorb the bad cholesterol before it has a chance to choke your arteries and trigger a stroke or a potentially fatal heart attack.
Prevent Cancer:
Cancer are of different types which are mainly occurs due to free radicals in the cells. Research have also shown that eating regular helpings of rhubarb will raise your white blood cell counts which are responsible for reducing the amount of free radicals that are floating around in your blood stream. Rhubarb is also usual to prevent the growth of several different kinds of tumors.
Topical Uses:
To make a fine paste, use a bowl and pestle. When the rhubarb is good and viscous you should massage the pulp on any cuts or scratches that you might have. The juice from the rhubarb will help to prevent the injured area from developing a staph infection.
Help to prevent deep vein thrombosis:
Rhubarb helps to prevent deep vein thrombosis because of the nutrients and vitamins. Deep vein thrombosis is a blood clot in your feet that can spread to your lungs if not treating it. Rhubarb is the simplest way to prevent deep vein thrombosis.
Metabolic rate:
Rhubarb stimulates metabolic rate of the body and so it is a good for people who want to loose unwanted pounds. The dietary properties are encouraged with the usage of fiber and potassium. It is said to speed up your metabolism with the potassium.
Safety of Rhubarb:
Many people have heard about the poisonous property of the rhubarb. This is true only for the leaves nut not for the stalks. Rhubarb extract for laxative and cholesterol lowering property have some side effects. Rhubarb extract can interact with certain medications particularly heart and blood pressure medications. Also, rhubarb is rich in oxalates which increase the risk of kidney stones especially in people who have susceptibility toward this.
Preparation of Rhubarb Root Tea:
Mix 1 – 1 1/2 teaspoons of rhubarb powder to 1 cup of water. Then, bring to boil this mixture and simmer at a reduced heat for 10 minutes. Add a little honey to your tea to sweeten its taste and also to enjoy the benefits of rhubarb root even more.
It is not recommended for long term use.

Easy Rhubarb Custard Pie
2 Eggs1.5 Cups Sugar
Pinch Salt
4 Tbsp. Flour
2 Tbsp. Butter (Room Temp.)
4 Cups Chopped Rhubarb
1 Pie Crust
- Cream first five ingredients.
- Add Rhubarb and mix to coat.
- Pour into pie crust.
- Bake 425° for 20 minutes.
- Turn oven temperature down to 350° and bake another 35 minutes.
Note: The custard bubbles while baking and coats the crust with yumminess, however, that sugar browns so do what I didn’t do and place a ring of foil around the crust area. Enjoy!
